la neige<\/strong> \u2192 utilis\u00e9es dans des glaci\u00e8res ou stock\u00e9es dans des caves isol\u00e9es.<br><strong>Le sel<\/strong> \u2192 salage de la viande, du poisson, du beurre\u2026 tr\u00e8s r\u00e9pandu.<br><strong>Le sucre<\/strong> \u2192 pour conserver les fruits (confitures, fruits confits).<br><strong>Le vinaigre<\/strong> \u2192 pour les l\u00e9gumes (cornichons, pickles).<br><strong>Le fumage<\/strong> \u2192 suspendre la viande ou le poisson dans la fum\u00e9e.<br><strong>Le s\u00e9chage<\/strong> \u2192 viande s\u00e9ch\u00e9e, poissons s\u00e9ch\u00e9s, fruits secs.<br><strong>La fermentation<\/strong> \u2192 choucroute, fromage, bi\u00e8re\u2026<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Les grandes \u00e9tapes de l&rsquo;invention du r\u00e9frig\u00e9rateur<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>1834<\/strong> : un inventeur anglais, <strong>Jacob Perkins<\/strong>, fabrique la premi\u00e8re machine qui produit du froid gr\u00e2ce \u00e0 un gaz compress\u00e9.<\/li>\n\n\n\n<li><strong>1859<\/strong> : en France, <strong>Ferdinand Carr\u00e9<\/strong> invente une machine qui fabrique de la glace gr\u00e2ce \u00e0 l\u2019ammoniac.<\/li>\n\n\n\n<li><strong>1869<\/strong> : un autre Fran\u00e7ais, <strong>Charles Tellier<\/strong>, installe la premi\u00e8re petite usine de froid \u00e0 Paris.<\/li>\n\n\n\n<li><strong>1876<\/strong> : Tellier \u00e9quipe un bateau, <em>Le Frigorifique<\/em>, d\u2019un syst\u00e8me de r\u00e9frig\u00e9ration : pour la premi\u00e8re fois, de la viande arrive bien conserv\u00e9e d\u2019Argentine en France.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Dans les maisons<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Au d\u00e9but, les r\u00e9frig\u00e9rateurs sont rares et chers.<\/li>\n\n\n\n<li>Apr\u00e8s la <strong>Seconde Guerre mondiale<\/strong> (ann\u00e9es 1950), ils deviennent accessibles aux
